Baked Chipotle Chicken Samosas

These baked chipotle chicken samosas are the perfect savory bite! I mean who doesn’t love samosas?? They’re just the perfect crispy, crunchy, savory bite!

The problem with me is sometimes I love them too much, you know? Perfect bite or not, a deep fried pastry is still not that good for you! So to lessen the guilt on one of my favorite indulgences, I found a way to make the traditional deep fried samosas healthier! Baked instead of deep fried!!!

Yes it does have a slightly different texture, but that satisfying crunch is there and no greasy hands!! Plus it beats standing in front of a deep frying and individually frying each one. Just stick all of the samosas onto a baking sheet in one shot and 30 minutes later you have can be sitting down and enjoying a fresh batch of samosas! If I’m making samosas at home, believe me I’m making this way from now on!

So course since I changed the method to make samosas, I didn’t want to show you just the traditional filling either. So these baked samosas are not the usual peas and potato filling (although that’s still my favorite!) Its a cheesy, spicy Mexican inspired chipotle chicken taco filling.

Have fun with the Filling!

Here is what I used for the Chipotle Chicken Filling:

  • Ground chicken
  • Chipotle peppers in Adobo sauce
  • Bell Peppers
  • Onions
  • Corn

You can use whatever filling you like here! If you’re looking for a vegetarian option, replace the chicken with tofu or black beans. Add in other veggies that you prefer: zucchini, tomato, carrot. If you’re looking for more heat amp up the chipotle peppers in the filling or add some fresh jalapeños! If its already too spicy, just reduce the seasoning amount and omit the chipotle peppers.

The fun thing about changing up the filling is that you can change up what you serve them with too. Try serving these baked chipotle chicken samosas in a platter like nachos with sour cream, salsa guacamole, queso and of course do not forget the spicy jalapeno cilantro chutney!!

Or turn it into a feast with veggie quesadillas and chicken fajitas!

Cheesy Baked Chipotle Chicken Samosas

Here's a fun change up to your favorite deep fried savory pastry! Make them healthier by baking them and putting twist on the filling with chipotle spiced chicken, onions, peppers and of course cheese!

Ingredients
  

For the crust

  • 2 cups all purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup oil
  • 1/2 cup water

For the filling

  • 1 tablespoon oil
  • 1 pound ground chicken
  • 4 tablespoons taco seasoning
  • 1/2 cup onion chopped
  • 1/2 cup bell pepper chopped
  • 1/4 cup frozen corn
  • 2 garlic cloves grated
  • 1 chipotle pepper in adobo sauce finely chopped
  • 1 tablespoon apple cider vinegar
  • salt to taste
  • 1/2 cup Mexican blend cheese grated

Instructions
 

Make the Dough

  • Stir together all purpose flour and salt.
  • Add in the oil and combine with your hands to distribute the oil. Mixture will be crumbly.
  • Slowly start adding in the water. Use your hands to knead the dough. Keep adding water until the flour combines and you get a stiff dough.
  • Let the dough rest for 30 minutes. Make the filling in the meantime.

Cook the Filling

  • Heat a large skillet to medium high heat. Add oil and let the oil heat for 1 minute.
  • Add the ground chicken to the oil. Cook the chicken for about 8-10 minutes, crumbling the meat as it cooks.
  • In a small bowl, mix together taco seasoning with 1 cup of water.
  • Add in the taco seasoning-water mixture, stir to distribute the seasoning. Add the chopped chipotle pepper, vinegar and garlic. Add salt if the taco seasoning you are using does not have any.
  • Allow the mixture to cook for 1o-15 minutes to burn off the water. Remove the seasoned ground chicken from the skillet once most of the water has burned off.
  • Add in the chopped bell peppers and onions. Cook for 2 minutes.
  • Add in the corn, stir to combine. Add the seasoned ground chicken back into the skillet with the vegetables. Stir to combine, remove from heat.

Make the Samosas

  • Prepare a baking sheet, by lining with parchment paper.
  • Divide the dough into 8 equal pieces. Knead each piece into a smooth ball.
  • Roll out each ball of dough on an oiled surface to about 6-8 inches in diameter. Cut each circle in half.
  • Picking up each half circle at a time. Wet the cut edge of the half circle with a little water. Bring the edge together to form a cone and press the edges to seal.
  • Fill the cone with the prepared filling a 1 or 2 teaspoons of cheese.
  • Lightly wet the edges of the cone and then bring them together and press to seal. Place on the parchment lined baking sheet.
  • Repeat this assembly for each samosa. (You will have leftover filling, which you can use up in nachos, quesadillas, etc.)
  • When you're ready to bake, pre-heat the oven to 400°F. Brush the samosas with a little oil.
  • Bake the samosas for 30 minutes. Flipping halfway through.
  • Serve warm!
