Its grilling season! We love experimenting with different flavors on the grill. We’ve been wanting to try out grilling paneer for awhile but weren’t sure how to season it and how to cook it without ending up with crumbled pieces of paneer all over the place. So we came up with this idea to slather paneer cubes in schezwan sauce and cook them skewered over the grill for this Grilled Schezwan Paneer! Let me just tell you, it really turned out to be an amazing idea and the perfect filling for kati rolls!
Grilling the Paneer
Its really quick and easy to prep, take a whole block of paneer, cut it into fairly large cubes and arrange them on skewers. The thought is that the smaller the cubes, the easier it is to end up with dried out pieces of paneer. Plus you want the cubes to hold up to being skewered. Then just brush on sauce (only alteration I did to the bottled Schezwan sauce was add some sugar to balance out the heat! But that part is totally optional depending on your heat tolerance).
After that, arrange all of the skewers on the grill basket, so there is no additional oil needed and no fear of paneer sticking to the grill. Instead it like a rotiesserie to cook the paneer!
Honestly once you get the paneer off the grill, you will have to stop yourself from eating all the cubes just like that! The schezwan sauce on the paneer gives it the perfect spicy and sweet coating. If you’ve already prepared the Spicy Schezwan mayo, you may not make it to the kati roll stage before running out of these grilled schezwan paneer!
Prepare the Fillings
Luckily I had made the stir fried veggies and the spicy Schezwan mayo at the same time the paneer was cooking. Otherwise I might have only been able to share Grilled Schezwan Paneer cubes by themselves because I was busy devouring the paneer once they came off the grill!
For the veggies, I simply stir fried them in a little oil and added some of the same schezwan sauce to really carry the same flavor throughout all of the components.
For the spicy Schezwan mayo, just combine the same Schezwan sauce, mayo, honey and lemon juice. Its the perfect dip or chutney to these Schezwan paneer cubes! Its creamy, spicy, sweet, and just slightly tangy!
Assemble the Kati Rolls
Heat up some your favorite flaky parathas or tortillas and add some Schezwan mayo to the center. Line up the paneer cubes and top with spicy stir fried veggies! Roll up your parathas and enjoy! And then repeat to your heart’s content!
Grilled Schezwan Paneer Kati Roll
Grilled Schezwan Paneer
- 1 14 ounce block Paneer refrigerated or if using frozen, defrost prior to use
- 3 tablespoon Schezwan sauce I used Chings Schezwan Sauce
- 2 teaspoon sugar optional
Spicy Stir-Fried Veggies
- 2 teaspoon sesame oil
- 1 carrot grated
- 1 bell pepper thinly sliced
- 2 green onion thinly sliced
- 2 teaspoon Schezwan sauce
- 3 tablespoon mayonnaise
- 2 teaspoon Schezwan sauce use more or less depending on your preference
- 1 teaspoon honey
- 2 teaspoon lemon juice
For Kati Rolls
- 4 Flaky Parathas Tortillas or naan will also work
- Schezwan sauce optional, add to amp up the heat factor
Grilled Schezwan Paneer
- To prep the paneer, cut the paneer block into fairly large cubes.
- Thread the paneer on your skewers. (For metal skewers, no additional prep is needed. For wooden skewers, make sure to soak the skewers ahead of time). Leave about an inch of distance between the paneer cubes so you can apply the sauce to all sides.
- Combine the Schezwan sauce with the sugar in a small mixing bowl. Brush this sauce on all of the skewered paneer cubes.
- Line up the skewers onto a grill basket. Ideally, the skewers will be long enough to fit end to end on the edges of the grill basket without falling through. If not, just lay the skewers on a grill pan.
- Pre-heat the grill on high heat for about 10 minutes. Lower the heat to medium and cook the paneer skewers for about 10 minutes, rotating halfway through.
- Remove from grill, allow the paneer to cool before removing from skewers and serving.
- Heat sesame oil in a pan on medium heat. Add bell peppers and carrots.
- Once the veggies have softened a bit, add the schezwan sauce.
- Finish with green onions and remove from heat.
- Combine all of the ingredients for the Schezwan mayo into a small mixing bowl. Stir until cohesive.
Assemble Schezwan Paneer Kati Roll
- Heat up flaky parathas or tortillas.
- Layer the Schezwan mayo, Schezwan grilled paneer, and the stir-fried veggies in the middle of the paratha. Optional: Top with additional schezwan sauce if you can handle the heat!
- Roll up and enjoy!
