Roasted Spiced Cauliflower/Gobi Bhaji

So I’m constantly searching for side dishes. The main entree comes easily, but ever since we’ve starting making our dinners leaner (cutting out carbs, more lean proteins), its always such a headache to come up with a satisfying but healthy side dish. This roasted spiced cauliflower was a last minute weeknight try and it is a complete hit! It is the perfect little spicy bite! It is slightly charred, super spicy, just slightly tart.

The Preparation

First of all, it is so (almost embarrassingly) simple! Just roast the cauliflower. I mean there’s no flipping involved or anything. It will literally take you less than 10 minutes of actual hands on work.

The Flavor

But the flavor is really amazing!! So I used Pav Bhaji masala seasoning blend! It is already spiced for cauliflower. Since most Pav Bhaji dishes typically use cauliflower anyways, the flavors are perfectly matched. Use a touch of salt if you need. It really depends on your seasoning mix, remember to check the salt before adding any salt.

Of course if you do not have Pav Bhaji masala on hand, I would recommend either subbing in either garam masala or a mix of ground cumin, ground coriander, chili powder, cinnamon and black pepper

Once the cauliflower is roasted, just finish it off with a squeeze of lemon and a sprinkle of cilantro.

The Texture

So as much as I am in love with the easy prep of this dish, I think the part that has really won me over is the texture that you get. It is really perfectly cooked. With the slightest bits of char, that really add so much to the flavor and bite! I love it!!

Its definitely been added to our rotation of easy, healthy, delicious side dishes. It goes perfectly with a fried rice, served with a raita, together with roasted potatoes, the list goes on and on!

Roasted Cauliflower

Here's a super easy spicy cauliflower side dish that pairs perfectly with any dinner!

Ingredients
  

  • 1 cauliflower cut into florets
  • 1 tablespoon oil
  • 2 teaspoon pav bhaji masala
  • ½ teaspoon salt
  • juice of lemon
  • chopped cilantro

Instructions
 

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper or aluminum foil.
  • Spread the cauliflower out on the baking sheet. Drizzle with oil. Season with the pav bhaji masala and salt. Toss to coat. Bake for 25-30 minutes.
  • Finish with a drizzle of lemon juice and cilantro. Serve immediately!
