Scallion and Cilantro Egg Salad
A quick and flavorful egg salad with scallions and cilantro, topped with everything bagel seasoning!
Servings: 2 servings
- 2 boiled eggs chopped
- 1 scallion thinly sliced
- 1 tablespoon cilantro chopped
- 1 tablespoon mayonnaise
- 1 teaspoon dijon mustard
- 1/4 teaspoon everything bagel seasoning
- salt and pepper to taste
Combine mayonnaise and dijon mustard in a small bowl.
Add chopped scallion and chopped cilantro to the mayonnaise/mustard mixture.
Add boiled and chopped eggs. Taste and add salt and pepper as needed.
Sprinkle everything bagel seasoning over egg salad and serve on a toasted croissant or bagel!
