Scallion and Cilantro Egg Salad

A quick and flavorful egg salad with scallions and cilantro, topped with everything bagel seasoning!

  • 2 boiled eggs chopped
  • 1 scallion thinly sliced
  • 1 tablespoon cilantro chopped
  • 1 tablespoon mayonnaise
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon everything bagel seasoning
  • salt and pepper to taste


  • Combine mayonnaise and dijon mustard in a small bowl.
  • Add chopped scallion and chopped cilantro to the mayonnaise/mustard mixture.
  • Add boiled and chopped eggs. Taste and add salt and pepper as needed.
  • Sprinkle everything bagel seasoning over egg salad and serve on a toasted croissant or bagel!
